It has fleshy pericarp surrounding a single seed containing 60 to 70 per cent sugar. The tree-ripe fresh date is delicious fruit. It, however, undergoes fermentation very rapidly. It is, therefore, dried in the sun. The fruit loses about 35 per cent of its weight in the process of drying.
